The usefulness of the much desired but scary PICKLE (by Rujuta Diwekar)- You can relish it now!!

What is the first thing that comes to your mind when you think of the Indian Pickle...Wow I love them but oops........calories !calories! calories!!!!(coz of the huge amount of oil and salt that accompanies it)

Now here is the good news..

Rujuta  in her book "Indian food Wisdom",says that the fruit sugar and the other nutrients like the spices,herbs,oil and salt come together in a controlled temperature and environmental conditions and makes it a delicious concoction .This is now known as the "good bacteria" or "pro-biotic bacteria".This bacteria stays in the gastro intestinal tract of our body and assists in good digestion,absorption ,assimilation and excretion of our food.The process that occurs in the pickles in known as "lacto-fermentation".
